Wanda’s Kitchen……Sausage Pinwheels and DaySpring Winner!!

Wanda's Kitchen is a weekly post dedicated to my Mom. She was a contibuting foods editor to our local newsapaper and to HomeLife Magazine. Mom went to be with the Lord on September 22, 2009.

 

It’s hard to believe it’s December 3rd and I haven’t bought a single Christmas present (sigh). I’m going to have to brave this cold weather and do some shopping! I’m also going to have to do some cooking, so today I want to share with you an appetizer that is delicious and can also be made ahead of time and frozen until you are ready to use them.

This is the picture Mom took of her Sausage Pinwheels. The quality of the picture is not great because I took a picture of her picture. I just smile when I see her pictures. This was taken in the early 90’s.  I love the way she added the candle stand. I know she spent time setting it up just the way she wanted it and she probably never thought it was quite perfect enough. (I think it’s perfect Mom!)

 

 

 

 

Sausage Pinwheels

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

2 tablespoons cornmeal

¾ cups milk

1/4 cup vegetable oil

1 pound bulk pork sausage, softened

1 cup shredded cheddar cheese

Combine flour, baking powder, salt, and cornmeal; stir in milk and oil. divide dough into 3 equal portions. Roll each into a 12×9-inch rectangle. Spread 1/3 of sausage over dough and top with 1/3 cup cheese. Roll up jellyroll fashion beginning with long side; pinch seam ends to seal. Wrap in wax paper, and chill until firm. Repeat with remaining ingredients. cut rolls into 1/4 inch slices; place on ungreased baking sheets. Bake at 400 degrees for 15 to 20 minutes.  Yield: 5 dozen

Note: Sausage Pinwheels may be placed on a baking sheet and frozen. After slices are frozen, transfer to an airtight container, and freeze up to 1 month. Thaw slightly, and bake as directed above.

Comment:It was so hard to decide! I really like the metal platter that says “Jesus is the gift” as well as the cup and saucer set. I subscribe to your blog. I also follow you on Facebook. I found out about you from your sister’s blog – which I stumbled upon last Christmas. We just lost our Mom to cancer in August, so last Christmas was our last time to celebrate it with her. Blessings! Janna    

Oh Janna I’m so happy for you and I have to admit I shed a tear knowing you’re spending your first Christmas without your sweet Mom. Blessings to you my sweet friend!
