Chicken Broccoli Pasta Salad: A Summertime Classic

Summer is all about fresh flavors and light meals, and one of my favorite light meals is this delicious chicken Broccoli Pasta Salad. This dish has it all, tender chicken, crisp broccoli, your favorite pasta shape, and a creamy, tangy dressing to bring it all together. It’s the perfect make-ahead recipe for picnics, BBQs, or an easy weeknight meal.

Here are the ingredients I ordered using my Walmart+ membership for my recipe:

Ingredients

  • 1 pound (4 cups) pasta (I love the Sfoglini pasta!)
  • 1 pound cooked seasoned chicken breast, diced into small cubes (about 2 cups)
  • 3 cups small broccoli florets
  • 1/2 cup dried cranberries
  • 1/2 cup diced celery
  • 3/4 cup sliced almonds
  • 4 scallions, diced

For The Dressing

Instructions

Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse under cold water (drizzle with olive oil to prevent sticking).

Chop the chicken into cubes, cut the broccoli into bite-sized florets, and chop the celery and scallion into small pieces.

In a large bowl add the cooked pasta, chicken, broccoli, dried cranberries, celery, almonds, and scallions.

In another bowl, whisk together all the ingredients for the dressing until combined and smooth (this dressing is delicious!).

Pour the dressing over the pasta and mix together (I didn’t use all the dressing).


Enjoy right away or refrigerate until ready to serve. You can also make this as a side dish to serve with hamburgers or hot dogs; just leave out the chicken.

  2. Yes real life sure has a way of throwing a wrench in life. Please pray for my 91 year old father he is a Korean veteran, he was a staff sergeant. I just found out this week he has a 4cm tumor in his brain and they can’t do an mri because he has a piece of metal in his lip and in his eye. They would need to be removed first before the mri then brain surgery. I think he is not going to do anything. He needs prayers for making the right decision, or for our Jesus to heal him. Thank you

    1. Joan…. Going to pray for your dad right now. I’m so sorry for this trial in his life and yours. Dads are special. I lost mine in 1998 from a fall off a ladder. He was only 63 yrs old. He is with the Lord, but I still miss him. Just cried yesterday with a friend as she lost her son to suicide 7 yrs ago this month at age 20 and it brought up memories of my dad. Life bring challenges and I’m thankful God walks with us through them. They don’t always come out how we want, but I know God has the big picture. Praying peace over you all during this decision making time.

So much going on right now in our world and our backyard. We have some close friends and the husband has found out he has bone cancer leukemia. It’s been so hard on them both and we have just tried to cover them in prayer. Praying for you and your family.

I think I follow your friend that is having surgery today and have also said prayers for successful surgery for all involved. And good luck with follow thru on your decisions…we have to trust in our gut and prayers to guide us in our path and trust it’s for the best.   9. Love beauty for the heart message. I hope your friend’s surgery went well. My friend had surgery yesterday after falling on her hip Tuesday. I saw her yesterday and it’s amazing how her spirits were. She loves Jesus and sees the opportunity in the hospital as a way to evangelize. After I have anesthesia I’m drowsy but she was talking and laughing. It was inspiring. The salad sounds yummy. I’m going to try it but without almonds and cranberries. I’m weird that way about salads.
