Chicken Broccoli Pasta Salad: A Summertime Classic

Tremendous thanks to Walmart+ for sponsoring this post.

Summer is all about fresh flavors and light meals, and one of my favorite light meals is this delicious chicken Broccoli Pasta Salad. This dish has it all, tender chicken, crisp broccoli, your favorite pasta shape, and a creamy, tangy dressing to bring it all together. It’s the perfect make-ahead recipe for picnics, BBQs, or an easy weeknight meal.

I ordered all my ingredients using my Walmart+  membership. It’s the one membership I use almost every week! It’s so easy to go online and add all your groceries and other essentials to your cart, select your time slot, and they’re delivered right to your front door for free ($35 order minimum, restrictions apply). Walmart+ offers free delivery from stores at the low prices you love and free shipping with no order minimum. Here are the ingredients I ordered using my Walmart+ membership for my recipe:

  • 1 pound (4 cups) pasta (I love the Sfoglini pasta!)
  • 1 pound cooked seasoned chicken breast, diced into small cubes (about 2 cups)
  • 3 cups small broccoli florets
  • 1/2 cup dried cranberries
  • 1/2 cup diced celery
  • 3/4 cup sliced almonds
  • 4 scallions, diced

For The Dressing

Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse under cold water (drizzle with olive oil to prevent sticking).

Chop the chicken into cubes, cut the broccoli into bite-sized florets, and chop the celery and scallion into small pieces.

In a large bowl add the cooked pasta, chicken, broccoli, dried cranberries, celery, almonds, and scallions.

In another bowl, whisk together all the ingredients for the dressing until combined and smooth (this dressing is delicious!).

Pour the dressing over the pasta and mix together (I didn’t use all the dressing).

Enjoy right away or refrigerate until ready to serve. You can also make this as a side dish to serve with hamburgers or hot dogs; just leave out the chicken.

This chicken broccoli pasta salad is a total crowd pleaser, perfect for summer gatherings!

Beauty For the Heart™You keep him in perfect peace whose mind is stayed on you, because he trusts in you. Isaiah 26:3

Truth:  The key to experiencing this peace is to keep our minds focused on God. This means focusing our thoughts on Him and His goodness, rather than on the circumstances of our lives.

When we do this, we are reminded of His promises, His power, and His love. And in His presence, we find true peace.

Of course, there will be times when we face challenges and difficulties. But even in those times, we can still experience God’s peace if we keep our minds focused on Him.

The emphasis on experiencing God’s peace is simple: whether in failure or in victory, disappointment or joy, God is our focus.

Let your beauty shine from the inside out today!

  1. Thank you for being transparent about “real life” so many people going through so much. God bless you!!

  2. Yes real life sure has a way of throwing a wrench in life. Please pray for my 91 year old father he is a Korean veteran, he was a staff sergeant. I just found out this week he has a 4cm tumor in his brain and they can’t do an mri because he has a piece of metal in his lip and in his eye. They would need to be removed first before the mri then brain surgery. I think he is not going to do anything. He needs prayers for making the right decision, or for our Jesus to heal him. Thank you

    1. Joan…. Going to pray for your dad right now. I’m so sorry for this trial in his life and yours. Dads are special. I lost mine in 1998 from a fall off a ladder. He was only 63 yrs old. He is with the Lord, but I still miss him. Just cried yesterday with a friend as she lost her son to suicide 7 yrs ago this month at age 20 and it brought up memories of my dad. Life bring challenges and I’m thankful God walks with us through them. They don’t always come out how we want, but I know God has the big picture. Praying peace over you all during this decision making time.

      1. Thank you so very much for the prayers. What you said brought tears to my eyes. I’m so sorry for your loss and your friends loss.

  3. God is so good. There is a whole lot of life going on over here too – super hard things. But God, in His never-ending love and infinite wisdom knows exactly what we need and when we need it. This is one example for me. ♥️ thank you for your faithfulness. ♥️ (and that recipe) 🙂

  4. Thank you for the pasta recipe! Theres alot going on for me too. Thankfully we have prayer to bring us peace. I have had to make a difficult church related decision & its been extremely hard. Praying for you!

  5. Wow! Sounds yummy. I’ll be making this. Looks so easy and has all the good stuff I like in a light summer salad. Love to get your emails every morning. We all could use some prayer right now. So much going on right now in our world and our backyard. We have some close friends and the husband has found out he has bone cancer leukemia. It’s been so hard on them both and we have just tried to cover them in prayer. Praying for you and your family.

  6. Can’t wait to try this receipe. Going to store for my ingredients. I also love your blue top. Would love to order it!! You have great style and your God’s light shines through you!!

  7. Thank you for sharing…looks yummy and yes, all our thoughts are turning to summer and b’ques etc so will try this out! I think I follow your friend that is having surgery today and have also said prayers for successful surgery for all involved. And good luck with follow thru on your decisions…we have to trust in our gut and prayers to guide us in our path and trust it’s for the best. Great to have this community and others like it so thanks for all you do to brighten our inbox each day! Life throws us curve balls but community helps get us through it!

  8. Thanks for sharing the real in your life.
I have similiar pasta salad I make. Love this time of year for salads and cookouts.

  9. Love beauty for the heart message. I hope your friend’s surgery went well. My friend had surgery yesterday after falling on her hip Tuesday. I saw her yesterday and it’s amazing how her spirits were. She loves Jesus and sees the opportunity in the hospital as a way to evangelize. After I have anesthesia I’m drowsy but she was talking and laughing. It was inspiring. The salad sounds yummy. I’m going to try it but without almonds and cranberries. I’m weird that way about salads.

  10. Thank you for the Bible verse and explaining the steps to stay close to the Lord. I needed this. Also, thank you for the chicken salad recipe, it will be perfect for a family reunion coming up. I’m so sorry for all you and your friends are going through. You are an encouragement to her I’m sure.

  11. This recipe sounds yummy! My Sister and I follow you and love your content. I’ve enjoyed your coffee mugs and scriptures in the morning! The beauty for the heart is beautiful and I’m going to add it to my daily journal. Thank you for sharing.
