Wanda’s Kitchen…..Christmas is Here!

Wanda's Kitchen is a weekly post dedicated to my Mom. She was a contibuting foods editor to our local newsapaper and to HomeLife Magazine. Mom went to be with the Lord on September 22, 2009.

The Christmas season is here!!! If you’re like me you’re already feel a little overwhelmed.

My “to do”  list is long and my calendar is full for the next month. Whew! I’m already exhausted just thinking about it

Today I want to share with you our Buckeye recipe.

This is one that we have made for years in my family and we all love them!! They’re great to make and place in decorative tins and give to neighbors, co-workers, friends etc.

 1 cup peanut butter

1 cup butter

1 box confectioner’s sugar

Knead above mixture like bread dough. (use your hands, it’s messy….but easier)

Roll into balls—buckeye size.

Place them on a tray lined with waxed paper. Stick a toothpick in each ball. Then place the tray in the refrigerator until the chocolate’s ready.

Chocolate icing

Melt 1/2 bar of paraffin wax and a 12 oz. package of semi-sweet chocolate pieces together in the top of a double-boiler. (If you don’t have a double-boiler, use a smaller pan in a larger pan that’s half-way filled with water.)

Take peanut butter balls out of the refrigerator and dip in chocolate ixture. Be sure to leave the top open to resemble a buckeye. Remove the toothpick, and smooth over the opening.

Christmas scents

We all love our house to smell like Christmas during the holidays but if you have young children or are having company with young children, candles can be a little dangerous. This mixture works great and you don’t have to worry about candles getting knocked over.

As your guests arrive, they’ll love the welcome aroma of this scent. The smell travels from room to room giving that down home friendly feeling of Christmas. (I’m going to use this when my sister brings all four of her boys over….it get’s crazy!!)

3 bay leaves

1/4 cup whole cloves

1/2 lemon, halved

1/2 orange, halved

1 qt. water

Combine all ingredients in a pot. Bring to a boil. Reduce heat and simmer as long as desited. Check often and add additional water, if needed. Mixture may be stored in the refrigerator for several days and reused.

Food for Thought

There are tinsel and holly and songs to be sung.

There are bright lights and candies and bells to be rung.

There are shopping trips here and there and everywhere,

And folks hiding things with no time to spare.

There are cards to write and visits from friends,

and it seems cookie baking just never ends.

But there’s one special time that I like the best. What is it?

 I’ll tell you……..if you haven’t guessed.

When all are in bed, I tiptoe back down,

And pretend that I’m standing there in Bethlehem town.

I look at the star in the creche and I think.

I’m there with the shepherds quick as a wink;

And then I’m beside the manger of hay.

The place where Christ Jesus, that sweet Baby lay.

It’s a very special time just between God and me,

And I thank Him that Christmas will always be.
